All her commissioned work has come via word of mouth, starting with friends and moving outwards.

It's just a little hobby she does on the side, and makes a few dollars while at it!
 
When does she start working internationally? I would definitely order a wedding cake for my brother in law's wedding next year!... but he lives in Zimbabwe... shipping would kill me... and the cake of course...

Now that is just showing off, but when you're (married too one that is) that talented i think it's fine too do it.

So how are these cakes made? One day full of work, or over a longer stretch of time?

The simpler cakes can be made in a day, but the more complex ones take longer. Typically the ones made for my Birthday are the most technical ones, so they take the greatest amount of time to complete.
