So officially they covered 7 or 8 avatars. The four avatars before Aang, the first Avatar, and 2 or 3 random ones.

An interesting series I wouldn't mind watching would be the second Avatar. The first Avatar sought out the four elements and the subsequent Avatars had tradition and history behind them. The second Avatar would just be really confused person though once he or she mastered talking to the first Avatar, the show would play out almost like a Buddy Cop story or mentor/cub story.
