So I'm building my general on a carnosour, I can build either the old blood, or a scar veteran. I like the scar veteran's command ability, but I also like the old blood's weapons. I'm wondering if I can have the scar veteran but have the sun bolt gauntlet, and the sun stone spear, can I have both, or any?

You can only use the weapons that appear on the Warscroll, so if you build the Scar vet with the gauntlet/spear it won't be legal for match play.

from a modelling view you could magnetize your general/scarvet so you can swap out your weapon options.
