Let's play the scene out. What happens next?

Palpatine can probably use the force to free himself. But does he have his lightsaber... doubtful. Does he have a backup plan or reserve forces? Would Dooku join force with Anakin to take down Palpatine? And if so, could they (assuming either scenario of him having his saber or not having it)?

perfect execution of complicated plans works basically only in movies.

Let's say Anakin didn't believe Dooku and killed him. Anakin would still report what was said and SOMEONE would check up on it, just to be sure.

Assuming Palpatine tried to stop SOMEONE (whoever that is), the cover up would snowball as the more actions Palpatine takes to cover his tracks, the more people are watching him.
