If Leia was to be cast in Trek, she'd probably be more at home as a Terran Empire rebel in the Mirror Universe fighting the KCA, or at worst a Maquis terrorist in the Prime Universe. The Federation is too much of a powerful ruling body to be synonymous with the Rebel Alliance.

She did very well in the New Republic Senate until it became common knowledge that she was Darth Vader's daughter at which point she was pressured to resign.

No SiskOs? Or OdOs?

Quarks Gold Pressed Puffs?

I'm not sure what kind of cereal Gowron would have but it would bring glory to you and your bowl.

Ensign Kim's boring unflavored wheat gruel? Though I suppose Ensign Kim's cereal is unknown because the marketers never promote it.

Also, you need off brand versions created by Neelix almost as good as the replicator can do (or so he claims).

Also some kind Janeway coffee joke.

But in that case she wouldn't be slugging it out on the battlefield of some distant planet as in the artwork, she'd be back on Earth behind a desk, writing rules that get in the way of Starfleet Captains doing their jobs and generally adding to bureaucracy as the Federation's politicians always seem to do in Trek.

True, Leia still saw lots of military action in the EU novels but it was usually because Luke or Han accidentally dragged her into whatever their Problem of the Week was or some evil force wanted to try to kidnap her kids and turn them to the Dark Side.
