I don't play too many board games, but one I absolutely love is Talisman 4th Ed. It's relatively easy to pick up, albeit quite a lengthy game, but a great one to play if you have the time. I've been known to play this over a couple of days if the game was particularly long. Ideally you'd play this with at least 2 players, however there is no reason why you couldn't adapt it for solo play.
The core rules are fine, however where I think this shines is when you throw in a house rule or two, add an expansion (I have 4 of them), and use an alternate ending. I'm actually in the (long) process of using StrangeEons to create some Warhammer Fantasy / Age of Sigmar cards (heroes, enemies, items, spells etc.) to use with the game.
It's now out of print due to FFG losing the GW licence for it, but I understand that GW will be re-releasing some of the expansions later this year (Reaper + Dungeon please). I also understand that GW will be releasing a 5th Ed. in 2018.

) - Resident Evil 2 (I've backed the Kickstarter)
- Zombicide Black Plague (prefer this over the vanilla game, don't own it yet)
- Dungeon Saga (not played it, but I like the idea of a dungeon crawl)
