Hey guys, Looking for input on which list you think would be better. Im hoping to be reasonably competitive.
I know list one is definitely more flexible, but damn do I think Saurus guard are cool. Let me know if you have any suggestions.

List 1:
Leaders
Saurus Scar-Veteran on Carnosaur (260)
- Warblade
Skink Starpriest (100)

Units
Saurus Warriors x 10 (100)
- Clubs
- Battleline
Saurus Knights x 5 (120)
- Blades
- Seraphon Battleline
Chameleon Skinks x 5 (120)

Behemoths
Bastiladon (300)

List 2
Leaders
Saurus Eternity Warden (140)
Skink Starpriest (100)

Units
Saurus Guard x 5 (100)
- Seraphon Battleline
Saurus Guard x 5 (100)
- Seraphon Battleline
Saurus Guard x 5 (100)
- Seraphon Battleline
Skinks x 10 (80)
- Meteoric Javelins & Star Bucklers
- Battleline

Behemoths
Bastiladon (300)

Battalions
Eternal Starhost (80)

List 1 — half your army is two monsters. Is that a good idea?

List 1 has some good points to it, but list two is more competitive I think. You might get more mileage out of a sunclaw starhost for the first list instead of the scarno.

My fear with list two is that I really have no board presence, where as the knights and chameleon skinks really let me move around people and control the game.

List 1 is better for board control, but a lot of armies will out manoeuvre you. That's why I prefer list 2 set up. But you need to play tp your playstyle, not mine, so let us know which you choose.

I honestly don't know what my playstyle is quite yet, I have yet to play a full game of AOS. How would you go about playing the second list successfully? Just very defensive?

Your eternal starhost isn't really guarding anything, so I would get a little more aggressive. If you're playing a straight battleline, you will want to hold back, but if you have objectives aggressively get there and then defend. Either way move your army up and into terrain if possible, using your skinks as meatshields, then hold a defensive stance. Get them to charge your guard then seal them in with the bastiladon.

Curiously, i would go for list 1.
List 2 is slow, and if you face mortal wounds, it's also dead. List 1 will give you more battlefield control.
