For someone that is really bad with green stuff these tutorials are brilliant, I've just printed them all off for reference.

Yeah those are really great!

One question though: how do you actually make the smooth surfaces to begin with? Mine always seem to have fingerprints or other uneven textures.
 
Best of luck! Did they work for printing as the pictures were, or did you have to rearrange them to fit a paper?

Smoothing green stuff is all about water and running a finger or sculpting tool along the modelling putty to smooth it out. I can't make it perfect (better at details, so I tend to cover surfaces with details since it won't be as smooth as one could wish for), but perfection aside it'll be second nature once you get the hang of it. Check this video out, it might help explain things. :)

Also, using a clay shaper can help, too.

When you're pinching the model flat use some saran wrap between your fingers. You can use saran wrap to smooth larger areas as well along with your tools. I like water best for feathers and fur as it helps remove access greenstuff as you pull your knife forming the hairs/fibers of the fur or feather.
