General plan: Hold up 3 enemy units with individual Saurus characters, each have T5 and a 1+ or 0+ save, have Stubborn Ld 8 on 3 dice with a reroll from BSB and are immune fear.

The 3 Saurus characters are as good as unbreakable and unkillable against all but:
-terror causing units
-heavy cavalry units who charge me and either have more then 1 rank or have no champions to challenge out
-expensive combat charaters with weapons that ignore armour

After 3 key enemy units are tied up (for example: DE black guard, DoC Blood crushers, VC Black Knights with vampires, Bret Grail knights etc.) the rest of my army can rampage over the rest of the enemies army (which is, theoretically, weaker).

Any suggested alterations?

I like your tactic and am very keen to here how you go. You have however left out that they are extremely vulnerable to magic. Your only magic defense is one Skink Priest. Even with his 2 dispel scrolls he will be hard pressed to stop your Saurus characters from getting zapped.

I would perhaps swap a cold one unit for a Stegadon? or maybe even mount your Skink Priest on an Ancient Stegadon? The Cold One units will do alot of damage how ever and slamming them in the flanks if you do manage to tie up some units will be very deadly.

as msinosic said that priest is your only magic defence maybe put him on a stegadon with engine of the gods and 1 unit of cavelry to make the saurus units around 15 otherwise they die too easy
