what else do you think I could use and is 2 squads of saurus to much at 1000 points?

I have just about every special save a stegadon and will prolly wait till higher point games for them. and I have 3 sallys so my choices of rare are sally sally and sally

as far as leader models I currently have in my collection I have an eotg, 2 skink priests, 2 chiefs, a scarvet/oldblood on foot, and a slann

Right first I think 2 suarus blocks are fine

Probably put a scar vet in one of them with whatever you want on it and then probably a couple of sally's and then after that whatever you want and btw is that 2 units of 10 and a unit of 20 or is it 2 units of 10 skinks??

ignore the ones that is just so excel can figure things out easier
not sure what magic items to give my skink priest though, thinking same as a test game I played though, dispel scroll and an RROR

I´d say go with a bigger block of saurus rather than 2 small ones. perhaps 25-30 of them.
for the priest, I recoment the plaque of tepok, to have 2 spells to cast is better then 1 spell.
I also agree that it might be good to use your steg later.
