This is something I've often thought about. While it sounds plausible when the characters mention it, it quickly breaks down upon further inspection. I can imagine a starship captain, science officer or the like, completing their duties in the absence of monetary payment because it is their passion in life. The job itself is fulfilling. But who would live on a space ship just to serve drinks? Who is going to risk their lives and day after day to complete a repetitive menial task for nothing?
